What I’ve enjoyed the most in the process is my family’s excitement and involvement in this move. My kids were moving stuff back and forth from the car to the office. Khaled (4), was so excited about being able to carry stuff (light in weight of course), because he’s ‘strong and eats healthy foods’ per his words. Both kids were happy to be in mama’s office!

Chickpea Mango Fusion Salad
Now… something for the foodies…
This is a chickpea mango fusion salad that has pleased family and friends. Why fusion? The spices and seasonings are a blend of Mexican and Indian inspired flavors. Why stick with one theme if you can deliciously blend two?
This salad is the perfect addition to your spring and summer grilled meals!
Chickpea Mango Fusion Salad |
- 2 c cooked chickpeas (or 1 can chickpeas drained and rinsed thoroughl)
- 1 red bell pepper, chopped
- 1 ripe mango, chopped
- 1 c cilantro leaves, chopped
- 1/2 tbsp olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp cumin
- 1/2 lime (or more, to taste)
- Mix all ingredients. Chill in the fridge for at least an hour before serving.
