My kids munch on the chickpeas before we even roast them. I sometimes have to start with an extra cup so we have enough chickpeas for later. When roasted, this makes an easy, dry, nut-free snack for school.

The trick to crunchy roasted chickpeas is to turn the oven off and leave them in there for an additional half an hour to two hours. Then store in an airtight container for a week. They might last longer, but we usually eat them before the end of the week!
