Cashew and Fruit Salad

 

This is a super easy salad that takes less than 10 minutes to make. It’s inspired by a recipe I found in Wegman’s Menu magazine, except that I didn’t roast the cashews at home as they did and added few more ingredients.

Serve as a side salad for two. Alternatively, add grilled chicken strips, salmon, grilled steak, tofu, beans, or add some more nuts to make an individual entree salad.

Ingredients:

  • 1  generous cup romaine lettuce, chopped
  • 1 generous cup arugula, chopped
  • 1/8 cup roasted unsalted cashews
  • 1/2 mango, cubed
  • 3 strawberries, chopped
  • 1 tbsp olive oil
  • 1/2 tbsp honey
  • juice of 1/4th lime (a couple of squeezes)
  • salt/pepper–tiny bit

Stir the salad dressing ingredients (oil, honey, lime juice, salt, and pepper) in a cup or jar.

Toss the salad ingredients (greens, mangoes, strawberries, and cashews) in the dressing.
